APPELLATION : The Bouzeron appellation, recognized separately in 1997 within the Villages de Bourgogne appellations. And this appellation of controlled origin honors the grape variety that made it famous: the Aligoté. Is very assertive here, and his personality is clearly distinctive. In the Côte Chalonnaise, north of the Saône-et-Loire, separated from Santenay by the Dheune valley, this hilltop village is all close to Rully and Chassagne-Montrachet.

SURFACE: 0.40 hectares
SOIL: Oxfordian white marl
VINIFICATION: 100% manual harvest, on arrival at the winery the grapes are pressed directly without crushing. After a slight settling, the must is immediately intonation. Aging for 15 months, of which 12 in barrels (10-15% were new).
TASTING NOTES: A light golden color. In the fragrance you will recognize Acacia, white flowers, peaches and mineral notes. The taste combines freshness with notes of hazelnut, citrus and exotic fruit.

IDEAL TEMPERATURE: 13°C
WINE PAIRING: River fish, sea fish in sauce white or shellfish, cooked cheese.
