Duvel is a natural beer with a subtle bitterness, a refined aroma and a pronounced hop character. The special brewing process, which lasts about 90 days, guarantees a pure style, a delicate sparkle and a pleasant sweet taste of alcohol.
Barley is the main ingredient of Duvel. Malted barley is germinated and breaks down starch into sugars. These sugar mass is called wort. In a next step, the wort is boiled. The beer gets its typical bitter taste by adding various aromatic hops from Slovenia and the Czech Republic. Afterwards creates a centrifuge ensure that all remaining traces of hop away.
Duvel yeast for the first time in vats, at 20 to 26 ° C. The brewer uses his own cannabis culture. The original yeast strain is derived from a local brewery in Scotland, Victor Moortgat in the 1920 selected themselves. After aging in the lower tanks, where the beer is cooled to -2 ° C, the drink is ready for bottling. By the addition of extra sugars and again re-fermented yeast the beer in the bottle. That happens in the warm cellars (24 ° C) and lasts two weeks. Afterwards comes the beer up in cold cellars, where it matures for six weeks.
A team of specialists beer check daily the process by means of flavor analysis. Only when Duvel after 90 days has reached its rich flavor palette may leave the brewery.
