In the Demerara Distillery there are a number of unique stills in use, each of origins from different sugar plantations in Guyana. The most famous stills of the distillery are, however, to know the three wooden stills:
• Enmore - Wooden Continuous Coffey Still
• Port Mourant - Wooden Double Pot Still
• Versailles - Wooden Single Pot Still
These three are made of Guyana hardwood, called Greenheart. The fact that the wood stills are made adds to the unique character of the El Dorado Rum, because the woods of the stills add a unique flavor to the rum. The Rare Collection is a special treat for the seasoned
Rumkenners. All Rare Collection rums are ripened on exbourbon vessels under tropical conditions in the Demerara warehouses in Guyana. The non-blended bottling on barrel strength also occurs in Guyana. This historical rum series is being filtered non-chill so as to preserve all unique individual flavor profiles as much as possible. For this first limited release of the "Rare Collection" 3 historic rum marques are selected all made using the wooden historical stills.
