Every drop of Jack Daniel's has come from Lynchburg, a Tennessee village of 600 residents, half of whom work at Jack Daniel's since 1866. Because of the unique Charcoal mellowing process, Jack Daniel's is not a bourbon, but a Tennessee Whiskey (a category in itself). This means that every drop of Jack Daniel's is filtered through a layer of 3 meters of charcoal, which takes 10 days. This allows the whiskey to absorb the essence of the charcoal. In addition, Jack Daniel's is produced using the 'Sour Mash' distillation method. Sour Mash is a process in which a special fermentation technique is used. One-third of the yeast from the previous fermentation is mixed with two-thirds of new yeasts and added to the mash. This gives the distillate extra aromas.
