The lighthouse at Hook Head faces the powerful Atlantic Ocean on Ireland's south coast. Just 10 miles from the Waterford distillery, Martin Foley is the one who grows his barley here on clay / loam soils derived from limestone. It is an extremely maritime terroir, exposing the barley to the full range of salt-laden storms and sea breezes. The result is a spicy whiskey with notes of clove, salted caramel, licorice root, ginger biscuits and lemon zest.
