Matured in the finest Pedro Ximenez and Oloroso Sherry Casks.
Nose: Walnut whip, Danish pastries, pralines, black bananas, thick cut orange marmalade and some slightly floral honey. Then mahogany, dried cranberries and apricots and some toasted dried fruit scones.
Palate: Muscovado sugar and cinnamon on baked apples, plum jam, some dates and fig rolls too. Then a sweet, earthy compost note, dark chocolate orange and some very gentle oak. It’s all about the sweet fruitiness here, not a hint of sulphur whatsoever.
Finish: The tannins push forward, with sweet black tea, dark chocolate, and some old oak and teak.
