Besides Rock Samphire, other botanicals are also added, including lavender, citrus fruits, cardamom, and lemon verbena. The base spirit used to make Minke Gin is produced on a family farm near Galley Head, where a velvety-smooth texture and mouthfeel are created in every drop.

Primarily fresh and dry on the nose, the palate reveals fresh fruit flavors with hints of green fennel. The finish has notes of salt and red peppercorns.
