This beautiful gin was created after Tolmann's Copper Pot Still Gin had been aged for at least 6 months in first-fill Bourbon barrels.

These oak barrels impart beautiful vanilla notes to the gin during the aging process. They also give it its beautiful amber color.

On the palate, hints of heather grass, violets, and fennel seed emerge. These are followed by notes of vanilla, honey, licorice, bay leaf, and oak. The finish is crisp with a hint of jalapeño pepper.
