DAFTMILL is a 100% Single Estate Scotch whisky. Francis Cuthbert himself gets on the tractor to tend to the grains used to make the whisky. Francis is also the one who operates the glorious pot stills to produce the whisky. From grain to glass, DAFTMILL does everything themselves, and they have been doing so for over 20 years. Francis distills for two months in the summer and another two months in the winter; together, this results in approximately 100 filled casks per year. Through this unique way of working, we go back to the 1800s, when farmers often used exclusively grain from their own land for the production of their own whisky and distilled during periods when the land did not need to be cultivated. DAFTMILL is an ode to the farmers and the old way of making whisky.

Our very own Dutch Single Cask has, as we have come to expect from DAFTMILL, an extensive story:

The Concerto barley variety was developed on the southernmost fields of the Daftmill Estate. This specific barley variety often yields a slightly higher sugar content, making it ideally suited for producing high-quality whisky. The grain was harvested on September 2 and 3, 2011, and subsequently dried and stored in the farm's warehouse. The barley was malted in the spring of 2012. The new make spirit was distilled during the summer season of 2012, and on July 4, 2012, it was filled into a first-fill ex-bourbon cask. It subsequently matured on the top floor of the warehouse until February 2026, after which it was bottled as a single cask exclusively for the Dutch market.

The whisky is characterized by flavors of brioche, malted barley, apple, lime, and a fine waxy undertone. Truly a fantastic whisky.
