A next-generation whisky that has attracted the attention of connoisseurs worldwide.

Kanosuke Hioki Pot Still is a Japanese pot still whisky inspired by Irish whiskey and bourbon and infused with a wealth of shochu expertise (in this pot still whisky, generous quantities of unmalted and malted barley are carefully distilled in pot stills and aged in new American white oak barrels and bourbon casks).

A bold and rich flavor with an aroma infused with a sweetness reminiscent of pastry and an elegant spiciness.

Making whisky with the knowledge of shochu distilleries

Can we make a new blended Japanese whisky that bridges the gap between the two?

This was Yoshitsugu's vision, and what gave him the ideas to realize it were the Irish whiskies and bourbon whiskies he had come to know during his visits to distilleries in Ireland and the United States.

By combining the characteristics and techniques of both types of spirits, he managed to create a new harmony that is only possible in Japan.

The raw materials and distillation ideas came from Irish whiskey.
The aging ideas came from bourbon.

Firstly, he used malted barley and unmalted barley as raw materials, which are also used in Irish whiskey. Unmalted barley is a raw material with which he was very familiar due to its use in shochu.

For mashing and distilling, he drew upon the Irish whiskey tradition and introduced the techniques of pot still distillation and vacuum distillation. These were actually techniques that had already been refined during the shochu production process, and which yielded a new pot spirit combining a subtle and beautiful aroma with a deep body.

Then comes the maturation. The inspiration for this phase came from bourbon whiskey. To bring out the powerful character, new American white oak barrels were selected. However, given the climate of Hioki, which accelerates the maturation process, a large barrel of approximately 450 liters was chosen here instead of a barrel of approximately 200 liters.

The expertise gained in making the cask-aged shochu “Mellowed Kozuru” supports this choice. Even when different cultures are merged, a shared philosophy forms the core of the process. This is the concept behind KANOSUKE whisky.

Nose
Dried figs, dark cherries, raisins and orange peel, followed by vanilla, honey, cocoa and a hint of cinnamon.

Taste
Full and silky smooth with notes of ripe plums, milk chocolate, caramel, roasted nuts, and dried fruit. The sherry influence is clearly present without overpowering the elegant distillery characteristics.

Aftertaste
Long and refined with soft spices, cocoa, oak, and a lingering fruity sweetness.
