The Apex Terroir series is our exploration of how location shapes whisky. Inspired by the vision of the late Dr. Jim Swan, who called this region a " playground " for innovation, this release delves into the impact of climate on maturation. From changing humidity and temperature to the influence of altitude, each location leaves a distinctive mark on the whisky during cask maturation, creating an unprecedented depth of character. This is a new perspective on whisky. This is whisky Terroir .
The climate at the Dead Sea, the lowest point on dry land, is far less inviting than postcards suggest. The relentless heat and unparalleled air pressure simply begged for whisky to mature there. These conditions practically squeeze the flavor from our casks, resulting in an intense dram that clearly reflects the terroir climate the whisky has endured. Full of minerality and spice, as well as a well-rounded sweetness, this offers a unique insight into the most extreme exploration of whisky terroir ever. A 25% angel share indicates this is certainly quite something.
Scent – Sweet with French vanilla and mocha nestled in a cigar box.
Taste – Soft black tea is followed by warm spices such as cinnamon, coriander seed and dark cocoa powder.
Finish – Long and satisfying with candied ginger and cloves, accompanied by characteristic mineral sea salt.
