The Terroir Series
The Apex Terroir series is our exploration of how location shapes whisky. Inspired by the vision of the late Dr. Jim Swan, who called this region a " playground " for innovation, this release delves into the impact of climate on maturation. From changing humidity and temperature to the influence of altitude, each location leaves a distinctive mark on the whisky during cask maturation, creating an unprecedented depth of character. This is a new perspective on whisky. This is whisky Terroir .
M&H Distillery specifically chose to mature its whisky in the pine forests of the Jerusalem Mountains to take advantage of the high altitude and low temperatures that are so rare in Israel. This climate allows for slower and gentler maturation than we're used to with M&H whiskies, resulting in a light and fresh whisky with a green, natural flavor that reflects the terroir. The annual angel share is therefore "only" 7%.
Nose – Full of bright green apples balanced by citrus leaves and subtle oak.
Palate – Dry oak and fresh pine battle it out as sweet herbs, fennel and white pepper also make an appearance.
Finish – Short, but juicy with bright notes of toffee apples.
