For the third in this annual autumn Sherry Cask Reserve series, Whisky Director Joe has sourced five Fino casks from the warehouse, three filled with Pot distillate, and two containing lighter column distillate.
Made from palomino grapes, Fino sherry is naturally light, dry and delicate. During maturation, the heavier, oilier character of the more traditional pot still inherited the spicier, ginger notes of these casks. While the fruitier, lighter character of this unique column still from Filey Bay allowed the sweet, honeyed flavours to sing. Only 2000 bottles are available.
Tasting Notes : Fruity and spicy with flavours of ginger cake, boiled candy, honeycomb and cinder toffee.
