The Apex Terroir series is our exploration of how location shapes whisky. Inspired by the vision of the late Dr. Jim Swan, who called this region a " playground " for innovation, this release delves into the impact of climate on maturation. From changing humidity and temperature to the influence of altitude, each location leaves a distinctive mark on the whisky during cask maturation, creating an unprecedented depth of character. This is a new perspective on whisky. This is whisky Terroir .
This whisky matured at the lowest point, where the Sea of Galilee meets the Jordan River, and the high humidity draws the alcohol from the casks, while the high temperatures greedily absorb the water. These conflicting influences manifest in warm market spices that complement the sticky and exotic date syrup, creating a regional flavor perfectly suited to the whisky's terroir. 16% annual angel share.
Aroma – Sweet exotic banana and dates, with lightly roasted nuts, ginger and market spice.
Taste – Marmalade with date syrup coats your tongue before a wall of warm spices marches right through.
Finish – The wave of complex spices and honey gives way to a lingering black tea with plenty of tannins and freshly picked tree bark.
